Discover the job of a snail farmer! Snails born in the Gers, bred in our outdoor parks and cooked by us! There’s something for everyone!
Our “Helix ASPERSA” snails, also known as “GRIS”, are bred outdoors in specially adapted pens to provide them with the best possible living conditions. Snail farming consists of rearing snails with the aim of transforming them into different recipes developed by us. We then offer all our cooked snails for sale.
Here, the snails are placed in pens from an early age (as juveniles) and grow for nearly 5 months using a rearing method that reflects our values of respect for animals and the environment.
They are fed a natural diet made up of plants present in the pens and selected food supplements offering a mix of cereals and inputs dedicated to snails (produced in the South-West, traced without GMOs).
At the end of their growth, the snails are harvested from the parks, then sorted and graded according to the type of recipe chosen.
The pens that house our little horned creatures are located at Saint-Bertrand-de-Comminges in the Pyrenees, south of the Haute-Garonne. The wooden buildings and vegetation provide shelter for our snails during the day, and in the evening the parks are watered to encourage them to move around and dine.
We aim to produce as many of the ingredients used in our cooked snail recipes as possible ourselves. That’s why the vegetables and herbs that make up our finished products are also produced on the farm at Escargot Commingeois.
